Leveraging Data to Optimize Store Layouts and Sell More Tacos

Torchy’s Taco Owner and Founder Mike Rypka started the company with a food trailer and a red Vespa. With almost 100 locations now open the dream continues to grow and expand into new markets across the United States, one taco at a time. However, as the company continues to grow, the design and construction department needs tangible data to find new ways to reduce construction and operation costs, while optimizing space and layout.

Using Domo, Torchy’s was able to combine internal and external data sources to drive decisions for their new stores. Now they use data to build store layouts that enhance the customer experience and create forecasts based on realtor data to pick out sites for new stores. They even use temperature trends to see how and when customers are gravitating to indoor and outdoor spaces. Using data, they are able to create a comprehensive plan for the 2022 architectural budget, backed by data.

In this session you’ll learn:

  • How Torchy’s Tacos uses Domo to create the optimal store layout and dining experience.
  • How they assess cost/benefit breakdown when considering large investments like outdoor patios.
  • How the company utilized Domo to determine how remodels and refreshes impacted sales.

Speakers:

  • Bruce Harris, Director of Finance Applications, Torchy’s Tacos
